Ingredients

- ½ teaspoon mustard seeds
- ½ teaspoon cumin seeds
- 1 teaspoon chana dal
- 2 sprigs curry leaves
- 1 cup onion, finely chopped

- ½ teaspoon garlic, crushed
- 1 teaspoon Himalayan pink salt (or to taste)
- 4 cups amaranth leaves (tender stalks separated and chopped)
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- 2 tablespoons sesame seeds
- 2 teaspoons red chili powder (adjust to taste)
- 1 tablespoon garlic, crushed (optional for a stronger flavor)
Method
Step 1: Prepare the Tempering
Heat oil in a heavy-bottomed pan over medium heat. Add mustard seeds and cumin seeds, allowing them to crackle. Toss in curry leaves, urad dal, and chana dal. Stir in the turmeric powder and crushed garlic, sautéing until the garlic turns aromatic.
Step 2: Sauté the Onions and Stems
Add the finely chopped onions and cook until they turn translucent. Mix in the salt and the chopped amaranth stems. Sauté for about 3 minutes, stirring occasionally.
Step 3: Cook the Amaranth Leaves
Add the chopped amaranth leaves and red chili powder. Stir everything together, then cover the pan and cook for 3 minutes, stirring occasionally to avoid sticking.
Step 4: Prepare the Masala Powder
In a separate dry pan, roast the coriander seeds over medium heat for about 2 minutes, stirring frequently. Add the cumin seeds, sesame seeds, and red chili powder, and continue roasting for another 2-3 minutes until fragrant.
Step 5: Blend the Masala
Grind the roasted spices into a fine powder. If you prefer a stronger garlic flavor, add the crushed garlic and blend again.
Step 6: Combine and Finish
Add the freshly prepared masala powder to the curry, mixing well. Sauté for a few minutes, adjust the salt to taste, and turn off the heat.
