Ingredients
- 1 cup fresh spinach, chopped (preferably hydroponic from Eewa Farms)
- 1/2 cup boiled sweet corn kernels
- 2 tablespoons mayonnaise (or Greek yogurt for a healthier twist)
- 1/4 teaspoon black pepper
- 1/2 teaspoon chat masala (optional)
- 4 slices of whole wheat bread (or your choice of bread)
- Butter or olive oil for toasting
- Salt to taste
- Fresh coriander leaves for garnish (optional)
Method
- Prepare the Filling: In a bowl, mix together the chopped spinach, boiled corn, mayonnaise (or yogurt), black pepper, chat masala, and salt. Stir well to combine.
- Assemble the Sandwich: Spread the spinach-corn mixture evenly onto two slices of bread. Top with the remaining slices to form a sandwich.
- Toast the Sandwich: Heat a pan or sandwich grill, lightly butter the outside of the bread, and toast until golden brown and crispy on both sides.
- Serve: Slice the sandwich diagonally and garnish with fresh coriander leaves. Serve hot with a side of your favorite dip or chutney.
