- DIFFICULTY: EASY
- 30 MINS
Ingredients
- 2 cups cooked basmati rice (or your preferred rice variety)
- 1/4 cup fresh Lemon Basil leaves (Eewa Farms), finely chopped
- 1 tbsp olive oil or ghee
- 1 tsp mustard seeds
- 1-2 green chilies, finely chopped (adjust to taste)
- 1/2 tsp turmeric powder
- Juice of 1 lemon
- Salt to taste
- 2 tbsp roasted peanuts (optional, for crunch)
Method
Prepare the Rice:
- Cook the rice and let it cool slightly. Ensure the grains are separate and fluffy.
Season the Rice:
- Heat olive oil or ghee in a large pan on medium heat.
- Add mustard seeds and let them crackle. Stir in the green chilies and turmeric powder. Sauté for 30 seconds.
Add the Lemon Basil:
- Lower the heat and add the fresh Lemon Basil leaves. Stir gently to release their aroma without overcooking.
Mix the Rice:
- Add the cooked rice to the pan, followed by salt. Gently toss the rice to combine with the seasoning and herbs.
Finish with Lemon Juice:
- Turn off the heat and drizzle fresh lemon juice over the rice. Mix well.
Garnish and Serve:
- Sprinkle roasted peanuts on top for a crunchy texture. Serve warm in a bowl.
Serving Suggestions:
- Pair with yogurt or a side of fresh salad for a complete meal.
- Add grilled vegetables or protein (like tofu, paneer, or chicken) to make it more filling.
Pro Tip:
Eewa Farms’ Lemon Basil provides a unique citrusy flavor that pairs perfectly with the tang of lemon juice. Adjust the spice level with more or fewer chilies based on your preference.
