Step 2: Sauté the Onions and Stems
Add the finely chopped onions and cook until they turn translucent. Mix in the salt and the chopped amaranth stems. Sauté for about 3 minutes, stirring occasionally.

Step 3: Cook the Amaranth Leaves
Add the chopped amaranth leaves and red chili powder. Stir everything together, then cover the pan and cook for 3 minutes, stirring occasionally to avoid sticking.

Step 4: Prepare the Masala Powder
In a separate dry pan, roast the coriander seeds over medium heat for about 2 minutes, stirring frequently. Add the cumin seeds, sesame seeds, and red chili powder, and continue roasting for another 2-3 minutes until fragrant.

Step 5: Blend the Masala
Grind the roasted spices into a fine powder. If you prefer a stronger garlic flavor, add the crushed garlic and blend again.
